Sloppy Joes



All of a sudden we got more snow -after weeks of nice spring weather!  The nerve!  Well, anyway, I was in serious need of some warm COMFORT FOOD.  So we had Sloppy Joes on homemade buns.  And they were tasty!  But I am still not loving this weather.  And the kids are still going crazy being cooped up inside.  Here's to hoping the snow melts -and SOON! 

On another note, Easter is coming up in a couple days and I am really looking forward to it.  What a great time to reflect on our Savior's love and all that He has done for us so that we may live again with Him some day!  Hope everyone has a wonderful Easter weekend with your families.



Sloppy Joes:
2 lbs ground beef
1/2 cup chopped onion
1 cup chopped celery
1 can tomato soup
1/4 cup ketchup
1 tbsp white vinegar
1/4 cup brown sugar
1 1/2 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp garlic powder
8 hamburger buns

Brown beef. Add onion and celery. Cover pan and cook until onions tender and transparent (about 5 mins). Drain. Stir in soup, ketchup, vinegar, brown sugar, and Worcestershire sauce. Season with salt and garlic powder. Heat to a simmer over low heat and cook until heated through, stirring frequently. Spoon onto toasted buns and top with sliced cheese if desired.
